I made blackened red snapper and had it with pico de gallo like I like it, and a cucumber onion salad. I put the pico de gallo all over the snapper so that there wasn't any used taking a picture. It would have just looked like confetti. It tasted good. It was a big snapper fillet. Now that I have fresh blackening spice and Pico, I may as well make blackened shrimp tomorrow or soon.
We had sandwiches, featuring bacon, and fries. I try to make things that my son will actually eat sometimes. He does like bacon sandwiches. I had mine with swiss cheese, lettuce and mayo. The wife went traditional blt which she always does. My son has bacon and cheddar, no veggies.
